Debunking the “Healthiest Meal Ever”

A group of British scientists, who specialize in food research, have designed a menu that they call “the healthiest meal ever.” Their list of dishes and ingredients does not even address the idea of where the food comes from, treating organic and chemical-free as being the same as factory and chemical-processed. While this is a common practice for food scientists, it totally destroys the validity of their argument. Just as bad, the “healthiest meal ever” boasts of avoiding saturated fats, being low-fat, and avoiding the ultimate demon, cholesterol. Never mind that the entire “low-fat is good—cholesterol is death” scam has long been exposed as invalid. This meal also leaves out the healthiest food ever—grassfed meat. Healthiest meal ever? Allow me to disagree, from a real food perspective.

Bear in mind that I have been unable to find the actual recipes, so this debunking is based on the information that has been reported.

The courses in the “healthiest meal ever” will be looked at individually. These are the courses:

Fresh and Smoked Salmon Terrine

Wild salmon is actually a very healthy food. But farmed salmon, the most common kind, is very different in flavor and composition. Farmed salmon is not allowed to roam the ocean as nature intended, and is usually fed food pellets, which is not their natural diet. In fact, many food pellets contain GMO soy, which is something salmon have never eaten before the twentieth century. Farmed salmon are so different from wild salmon that their flesh is colored white, not orange. A dye is added before the fish hit the market to fake the natural orange color of real wild salmon. The scientists fail to specify whether the salmon are wild or farmed, treating them as the same, which is a mistake. Since almost all Atlantic salmon are farmed, this dish would almost certainly be made of farmed salmon. And the other ingredients in the terrine are not even mentioned. Healthy? Not in my book.

Mixed Leaf Salad with Extra Virgin Olive Oil

This also sounds good at first glance. But no specification is made as to whether the vegetables should be grown without chemicals. If they are grown with chemicals, they contain pesticides, which are not healthy. No specification is made as to whether the vegetables are grown with artificial fertilizer or in rich natural soil. This makes all the difference when it comes to nutrient content, as vegetables grown with artificial fertilizer have far less. Even the types of leaf vegetables are not specified. This is an important omission because some raw leafy greens, such as spinach, contain large amounts of oxalic acid, a substance that prevents the body from absorbing vital minerals, such as calcium. To imply that any leaf salad, no matter what the vegetable is, is healthy is simply not true. This might not be so healthy, after all.

High-Fibre Multigrain Bread Roll

This does not sound even remotely healthy. Adding additional grain fiber to bread is a modern practice, not done by our ancestors. We can get all the fiber we need from fruits and vegetables, just like our ancestors did, for uncounted thousands of years. Many people cannot digest modern grains, and many are gluten-intolerant. Since high-fiber is specified, the grains are almost certainly whole grains, which contain large amounts of phytic acid. Phytic acid blocks the absorption of nutrients such as vitamins and minerals. Phytic acid can be neutralized through traditional soaking and sprouting techniques, but those methods are not even mentioned. The grains contained in the “multigrain bread roll” are not specified. Chances are overwhelming that it contains unfermented GMO soy, a substance full of toxins and mock female hormones, both as a “grain” and in the form of soy lecithin. It quite likely contains other GMOs, especially if it contains corn. Once again, the ingredients almost certainly come from grains grown with chemicals and pesticides. Chemicals and pesticides are not healthy. Processed grains like this are high in refined carbohydrates, which have an effect on the body similar to processed sugar. Healthy? Not in my opinion.

Chicken Casserole with Lentils and Mixed Vegetables

When I first read the title of this item, I let out a loud and heartfelt “Yuck!” My wife came over to investigate, and her face twisted in revulsion as she read the title. This dish sounds so horrible, both in title and content, that it could be an entrée in an American school cafeteria. Once again, no attention is paid to where the ingredients come from, treating organic the same as conventional. This dish is touted as “low-fat” and “low-sodium.” This can only mean that the chicken consists of the most boring meat on earth, skinless, boneless, tasteless, flavorless, chicken breast, most likely from a factory farm where the chickens never see the sun, are fed GMO corn and GMO soy, and are confined in crates. Of course, no specifications as to where the chickens should come from are made. The difference between true free-range chickens and factory chickens is huge. The lentils are almost certainly conventionally grown with chemicals. The “mixed vegetables” are not specified, are almost certainly grown with chemicals and pesticides, and could even come out of a can. It is quite likely that some of them are GMO. This is one dish that probably tastes just as bad as it sounds, like it came from an American school cafeteria. Not healthy to me.

Live Yogurt-Based Blancmange Topped with Walnuts and Sugar-Free Caramel-Flavored Sauce

While the yogurt sounds good, A blancmange always contains plenty of processed sugar. Walnuts can be healthy, but no distinction is made between walnuts grown with chemicals and walnuts grown without chemicals. The sugar-free caramel-flavored sauce almost certainly contains a number of artificial ingredients, especially artificial sweeteners, and does not even qualify as food, let alone as something healthy. I would not even taste this.

Now, it has been said that the British cannot cook, and this menu would seem to support that rumor, started by the French, I believe. However, I have had enough traditional English food to know that English food can be delicious. In fact, a traditional English dish was featured in the meal I am about to describe, and it was wonderful, both in taste and nutrition.

My Idea of a Much Healthier and Infinitely Tastier Meal

Since I feel I have an obligation not just to complain, but to come up with a better alternative, I will do so. Every ingredient in this meal was free of chemicals, raised on grass or on good soil.

The meal my lovely wife prepared for Father’s Day will do, as it was absolutely delicious and loaded with valuable nutrients. The menu contained:

Homemade Salmon Broth

This was made from wild salmon heads, stomachs, and collars, simmered for twelve hours. Loaded with the nutritional bounty of the sea, and delicious and invigorating.

Grassfed English Style Prime Rib (from Tender Grassfed Meat)

The king of roasts, a magnificent cut from U.S. Wellness Meats, full of grassfed goodness and nutrition, restoring, rejuvenating, delicious and satisfying beyond dreams.

Pan-Roasted Organic Yukon Gold Potatoes

These magnificent potatoes were cooked in the same pan as the prime rib, roasting in the delicious beef fat as the roast cooked, crisp on the outside, hot and tender on the inside, rich with the nutrients that come from good soil and grassfed fat.

Organic Carrots Cooked with Butter and Garlic

These deep orange carrots were naturally sweet, and savory, redolent with the wonderful combination of pastured butter and garlic, which are very healthy foods in their own right.

Crimini Mushrooms Sautéed in Butter

Butter and mushrooms are magic together, and the wonderful flavor of the deeply colored mushrooms combined perfectly with the pastured butter to make a simple, yet delicious masterpiece.

Roasted Organic Onions

These onions, rich with special nutrients, were roasted right along with the prime rib, and came out with a wonderful, caramelized, sweet and rich flavor.

Homemade Fermented Cilantro Salsa

This homemade condiment, made with cilantro, green onions, tomatoes and garlic fresh from the Farmers’ Market, provided the special nutrients of fermented raw vegetables, while perfectly complimenting the rich, deep taste of the prime rib.

Apricots in Season

These apricots, fresh from the Farmers’ Market, in season, smelled wonderful, tasted better than they smelled, contributed valuable nutrients, and were the perfect dessert for this magnificent meal.

Now, would you rather have my meal, or the one created by the English scientists?

Why Grassfed Meat Costs More and Is Worth It

If you buy grassfed meat, you know that the price is rising. Every producer I know has raised their prices. If an Internet producer charges you the price of shipping, that cost has increased as well.

Nobody likes to pay higher prices, especially in a tough economy. But in this case, I am going to continue to buy just as much grassfed meat as ever, and even more when I can. Why?

Because I want to be able to get grassfed meat, now and in the future. If I want to have the unique health benefits of grassfed meat for my family, I am going to have to support the ranchers who raise it, even in these tough times. And I invite you to join me. Because if we do not support them, grassfed meat could no longer be available.

 

Why the Grassfed Industry Is in Danger

There are a number of reasons that have worked together to cause the rise in prices. The rise in prices threatens the very existence of the grassfed meat industry, as will be shown.

The Increasing Cost of Fuel

Everyone knows how much the price of fuel has risen. This means that the cost to ship feed, cattle, and meat have increased enormously. In fact, the cost to ship ANYTHING is much more expensive. Shipping costs are a big expense for every rancher, and they continue to go up.

The Increasing Cost of Soy and Corn

The cost of soy and corn  has greatly increased. Soy and corn are used to feed factory cattle. You might ask, “What does the cost of soy and corn have to do with grassfed cattle?” After all, the grass is free. Unfortunately, it is not that simple. With soy and corn being so valuable, a number of farmers that used to raise cattle have decided they can make more money raising soy or corn, and have sold their herds, converting their pasture to cropland. It is much easier to grow seasonal crops than to nursemaid a herd of cattle 365 days a year. Less cattle being raised has created the most crucial part of the problem—a greatly reduced supply of feeder cattle.

The Shortage of Feeder Cattle

Feeder cattle are steers that are old enough and large enough to go to the feedlot. Again, you may ask, what do feedlot cattle have to do with the price of grassfed beef? Quite a lot, unfortunately. Because the high cost of feed has changed what the feedlots are looking for. The feedlots now want cattle to be kept on pasture longer, so the feedlot needs less feed to bring them up to slaughter weight.

For example, in one area, the feedlots would only buy a steer at the weight of 500 pounds. Today, the price of feed is so high that the feedlots want to buy steers at 1000 pounds—twice the weight. That greatly reduces the amount of feed the feedlots will have to buy to bring the steer to market weight. This situation makes the pasture that the steer eats to reach 1000 pounds very valuable. Obviously the steer sold at 1000 pounds will raise a lot more money than the 500-pound steer.

Steers destined for feedlots are competing for pasture with grass-finished steers. The shortage of feeder cattle has caused the price to rise to the point where a grassfed farmer will not make much more money for raising a grassfed and grass-finished steer. It takes about twice as long to finish a steer on grass as it does on feedlot feed, and requires much more work and effort from the rancher, for not very much more money.

In other words, selling cattle to a feedlot has become much more attractive financially. Selling more cattle to feedlots reduces the supply of grassfed meat, and causes the price to rise.

The Danger

And this is the great danger. If more and more grassfed farmers give up on raising grassfed beef and sell to the feedlots, the supply of grassfed beef will be reduced. The price will continue to rise to the point that only the truly rich can afford grassfed meat. If that happens, the movement is dead. The best way we can keep this from happening is to pay the prices charged by the quality grassfed producers who charge the least, so they can stay in business and thrive.

We are lucky that there are many grassfed ranchers who are doing their best to keep the price down, because they want people to be able to afford this wonderful food.

We need not sacrifice quality to do this. In fact, most of the best meat is raised by those small ranchers who try to make their meat affordable for most people, rather than focusing on catering to the super rich. All of these dedicated farmers have had to raise their prices, and I will pay them, because I know what is at stake. Careful Shopping Can Help

Comparison shopping can help reduce the cost of grassfed meat. There is a huge difference in price among various producers and retailers.

For my area, the best buys I have found are these:

I buy all of my local grassfed meat from Humboldt Grassfed Beef, which sells its wonderful grassfed meat at Lunardi’s markets, an eight-store chain in the San Francisco Bay Area, and to other retailers in California. Their meat costs much less than the meat carried by Whole Foods, for example, and tastes much better.

When I shop on the Internet, I buy most of my meat from U.S. Wellness Meats, which charges only $7.50 for shipping and handling for most orders, has many of the lowest prices on the Internet, a huge selection of wonderful grassfed meat, regular sales, and a number of ways to save.

You can also save a lot of money by buying a whole steer, a half steer, or a quarter steer from a local farmer, though you will need a lot of freezer space. Eatwild.com has a list of such farmers, by state.

I am going to continue to buy just as much grassfed meat as ever, even at the higher prices, because I want to preserve the availability of humanity’s oldest and most valuable food. And because I love to eat it!

Great Soil Makes Great Meat and Great Vegetables

I was in a hurry Saturday afternoon. I had to make a pot roast, but I had very little time. So I decided that we would settle for a meal that was good and nutritious, but simple and easy to prepare. I browned the grassfed roast in grassfed beef suet, took it out of the pan, and browned an onion and some shallots in the drippings. I returned the roast to the pan, added some water, salt and pepper, covered it, and stuck it in a low oven. The whole procedure took about ten minutes. Several hours later, we ate what I thought would be a mediocre but acceptable pot roast. I was wrong.

The roast was absolutely delicious, with a wonderful rich flavor, and a great texture. We all remarked on how wonderful it was. I was shocked that it tasted so good. After thinking about it, I realized what made the meal so wonderful—the quality of the ingredients.

But why were the ingredients so good? After all, all the meat we eat is grassfed, and all the vegetables we eat are organic. After some thought, I realized that all the ingredients came from farms that had particularly great soil, from farmers who really cared about the quality of their food The lesson I learned is that even in the world of real food, some food is exceptional.

The Importance of Soil

Every plant and grass gets its nutrition from the soil—the richer the soil, the more nutritious the plant. Grassfed cattle get their nutrition from the grass. Grass growing in rich soil makes great feed for cattle, resulting in great flavor and nutrition, and fatter cattle, which are more tender and flavorful. Factory agriculture depletes the soil, relying on chemicals and artificial fertilizer to produce plants that are far inferior to plants grown on rich soil. Yet even good soil is not as desirable as great soil.

The Wonderful Meat

The roast came from U.S. Wellness Meats. I have been ordering grassfed beef from U.S. Wellness Meats regularly since August 2006. They sold me the first grassfed meat I successfully cooked. Their meat was excellent then. The business has grown a great deal since 2006, and the quality of the meat has changed. It has become steadily better, more tender, more flavorful, more energizing. While the quality of most companies’ products suffer as they grow bigger, U.S. Wellness Meats is an exception to the rule. I credit the fact that their meat is getting steadily better to their founder, John Wood, who constantly takes measures to improve the quality of the soil on his farm, and to raise even better meat. The improving quality and terrific flavor of his already superb meat show the results. The wonderful natural flavor of the meat was a huge factor in producing this easy, yet delicious roast.

The Amazing Onion and Shallots

There is a farm at our local farmers market. A couple months ago, I passed their stand and was struck by the beautiful vibrant color of their organic Italian peppers. We already bought our produce from another organic farm in the market, and were very happy with their produce, but these peppers looked so wonderful, I bought a few. After sautéing the peppers simply, we were completely blown away with their incredible flavor and pleasing texture. And we felt good after eating them, a feeling I usually get only when eating grassfed meat.

Next week, we stopped at the stand, and bought all kinds of gorgeous produce. I talked to the farmer, and told him how much I enjoyed the peppers. He said, “This is the food I feed my family.” He said it seriously, with pride and satisfaction, as if feeding his family was the most important thing in the world, and it was his duty to do it well, and he knew he was doing his duty. We talked a bit more, and he spoke about the natural measures he took to improve his soil, which he did every single year. No chemical fertilizer or pesticides for his family! No wonder his produce was so wonderful.

The onion and shallots came from his farm, and their rich complex flavor blended perfectly with the fantastic meat from U.S. Wellness Meats.

All factory foods taste pretty much the same. Factory beef has the same flavor, no matter where it comes from. All factory vegetables taste pretty much the same as well. But grassfed beef had a wide variety of tastes, and grassfed beef from cattle raised on healthy grass growing on rich soil has incredible flavor and tenderness. Organic or the equivalent vegetables also vary widely in flavor, but the very best comes from those wise farmers who improve their soil. When you eat food of this very high quality, even a simple, easy recipe can result in a magnificent meal.

7 Grassfed Foods that Can Really Improve Your Natural Functions

My friends at U.S. Wellness Meats recently mentioned in their newsletter that WebMD had actually posted a list of foods that could improve your health. As mentioned in the newsletter, the very fact that a mainstream site would even state that any food could heal is a huge step forward. True, the list of foods at WebMD did not include any meat, and did not make any distinction between organic (or the equivalent) foods and the pesticide and chemical soaked foods offered by conventional agriculture, but hey, it’s a start.

This has inspired me to offer my own list of seven grassfed foods that greatly improve the natural functions of the body. The natural functions of the body are nature’s way of keeping us healthy, and the better these functions work, the healthier we are.

  1. Grassfed Beef. This is one of the oldest foods of humankind. Our ancestors thrived on it, and so do we. Grassfed beef and fat are loaded with all kinds of nutrients, such as a perfect balance of omega-3and omega-6 fatty acids, natural CLA, the Vitamin B complex, all the amino acids, many other vitamins, many minerals, and many other nutrients, often known as “co-factors.” Grassfed beef and fat are easy to digest and the nutrients they carry are easily assimilated. I have never heard of anyone being allergic to grassfed beef. If you eat the meat very rare, it is also full of many valuable enzymes that will help digestion and also nourish the body. Grassfed beef was known in Europe as the most effective way of rebuilding a damaged body. An old German saying  is beef gives strength. It was eating grassfed beef and other grassfed meats that rebuilt my body back to good health, and I have received many emails from others who have had the same renewing and revitalizing experience.
  2. Grassfed Bison. Grassfed bison has all the benefits of grassfed meat, and more. Grassfed bison was the favorite and most common food of the Native Americans who lived on the Great Plains of the United States. These native people were known for their robust good health, fantastic eyesight, ability to heal from even the worst of wounds, great stamina, height, strength, and perfect teeth, though they had no dentists. They also had almost no infant mortality, in an age where only half of the babies born in London survived to age 5. These native people were also known for being healthy robust and active even into a very advanced age, and for keeping their teeth and eyesight well into their nineties. Grassfed bison is even easier to digest than grassfed beef. One of my favorite foods is very rare grassfed bison roast or steak, so tender it can be cut with a fork. I feel better with every bite. At the end of such a meal, I feel renewed and revitalized. Unfortunately, grassfed bison has become very expensive as the demand is much greater than the supply, but it is worth getting as a very special, nourishing treat as finances permit.
  3. Grassfed Lamb. This is one of the world’s very favorite foods, though lamb is not popular in the U.S. This may be because the U.S. is one of the very few countries to feed grain and soy to lambs, which ruins the taste, in my opinion. But fortunately, the U.S. still has some ranchers who raise wonderful grassfed lamb. Grassfed lamb is also an ancestral food, containing the same invaluable nutrients as grassfed beef and grassfed bison. Grassfed lamb was used by our ancestors to relieve digestive difficulties. This ancient wisdom was invaluable for me a few weeks ago. I had eaten at a restaurant and suffered from indigestion and similar complaints within a day. Natural remedies did not help much. I was doubtful, but I roasted a rack of lamb medium rare, and ate some of it with the fat. Within hours, all my digestive difficulties were gone. Grassfed lamb can be absolutely delicious if properly cooked, tasting nothing like the conventional lamb so many Americans hate.
  4. Grassfed Bone Broth. Whether made with the bones of grassfed beef, grassfed bison, grassfed lamb, or any combination of them, grassfed bone broth is one of the most nourishing and comforting foods you can eat. Rich with easily assimilated minerals, these delicious broths are also full of natural gelatin and other substances that are vital for the natural functioning of our bodies, and help preserve and strengthen our bones and joints. These broths help stimulate and ease the digestive system, which is why broth was served as a first course or with meals all over the world. Bone broths, brimming with nutrients, are a universal remedy for colds and all kinds of illness. I also think of them as the perfect mineral supplement, as the nutrients in broth are very easy to digest and assimilate.
  5. Grassfed Liver. Whether from grassfed beef, grassfed bison, or grassfed lamb, grassfed liver is one of the most nutrient-dense foods you could possibly eat. Hunters all over the world, for uncounted thousands of years, would eat the raw livers of the animals they killed. Lions and other predatory animals will also eat the liver first. Grassfed liver is particularly rich in B vitamins, Vitamin A, Vitamin D, Vitamin K, magnesium, and many other nutrients. Grassfed liver also contains substances that help the human liver function much better. Other substances in liver reduce fatigue and improve brain function. Contrary to popular belief, grassfed liver is not full of toxins, but is full of nutrition. I have not yet been able to do it myself, but friends who regularly consume small amounts of raw grassfed liver report wonderful results. I get very good results from cooked grassfed liver.
  6. Grsssfed Heart.The hearts of grassfed animals were prized all over the world, as it was felt that eating them would strengthen the human heart. This belief was common even into the twentieth century, where country doctors would often prescribe it to their patients as a way to avoid heart disease. Grassfed heart is perhaps the best natural source of coenzyme CoQ10, which is vital to maintaining a healthy heart. Grassfed heart, whether from beef, bison, or lamb, is loaded with many nutrients, and is believed to contain substances that will strengthen the human heart.
  7. Grassfed Kidney. This organ meat was also a favorite of traditional cultures, from Europe to Asia to Africa to the Americas. It is very dense with vitamins and minerals, and contains substances that are believed to improve the natural functions of the kidney. Wild predatory animals will usually eat the kidneys after they finish the liver.

If you do not want to go to the trouble of cooking the organ meats, you can still get the benefits of eating them, in one wonderful product—U.S. Wellness Meats Grassfed Liverwurst. This wonderful grassfed beef product is 25% grassfed liver, 25% grassfed heart, 25% grassfed kidney, and 25% grassfed beef and fat. This is the easiest way I know to get the benefits of organ meats, and the combination of all these nutritious organs gives a new meaning to “nutrient-dense.” This is my favorite sausage of all time, and I make it in many different ways. These traditional animal foods are some of the superfoods our ancestors knew and thrived on, and we can enjoy their many benefits today.

“MyPlate” is the new brainwashing concept introduced by the U.S. government, since the horrid “food pyramid” did not convince enough people to eat the way the diet dictocrats dictated. “MyPlate” has bothered me ever since Jimmy Moore exposed its many problems in this great blog post: Harvard’s ‘Healthy Eating Plate’ Only Marginally Better Than USDA’s MyPlate.

“MyPlate” has somehow managed to be even worse than the “food pyramid,” which is quite an accomplishment, being a true route to dietary disaster, severe malnutrition, and rampant disease. However, the dietary guidelines have been effectively debunked by many, including the Weston A. Price Foundation  in Comments on the USDA Dietary Guidelines.

I have also been thinking about the Weston A. Price Foundation Conference, which will begin this Friday, November 11, 2011,  all the wonderful real food they will serve, and wishing I could be there.

So I thought I would present “My Real Food Plate,” made up of what I actually eat, based on the research of Dr. Weston A. Price, the recommendations of the Weston A. Price Foundation, and what makes me feel good and healthy, while tasting wonderful. You can see “My Real Food Plate” in the above photo. After the photo was taken, I brought the plate to the table, and happily ate every bit of it. So you can see that I back my writing with my appetite, unlike the diet dictocrats. (You NEVER see them eating what they attempt to impose on the rest of us.)

These are the foods on “My Real Food Plate” (clockwise starting with the grassfed meat at the top):

  1. Grassfed beef and fat. This leftover roast beef, made from 100 percent grassfed and grass-finished beef (from U.S. Wellness Meats) has a perfect ratio of omega-3 to omega-6 fats, large amounts of CLA, and a wonderful range of vitamins, amino acids, and other valuable nutrients. I eat the little pieces of fat you see around the meat. The nutrition in grassfed fat is great fuel for our bodies. Grassfed meat is one of the oldest foods, going back to the Paleolithic Era and the very beginning, and our bodies welcome it. And it tastes so good!
  2. Traditional sauerkraut. This traditional lacto-fermented sauerkraut is made from nothing but cabbage and salt, and the fermentation process. It is also full of nutrients and enzymes, enhanced by the fermentation process. These enzymes help with digestion, and it is delicious. Sauerkraut is one of the oldest and most traditional foods in the world, going back to ancient China and beyond.
  3. Sourdough spelt bread. This bread contains only three ingredients: spelt, water, and salt. The grain is grown without the use of chemicals. A sourdough starter is used in making this bread, consisting of nothing but spelt and water. This bread is absolutely delicious, and easy to digest. It is covered with pastured grassfed butter, and bison liver pâté, as I always eat grains with plenty of good animal fat. This is one of the most traditional of breads, and is full of valuable minerals.
  4. Pastured grassfed butter. Real butter, full-fat, from grassfed animals, is one of the most nutrient-dense foods you can eat, and utterly delicious. Butter is full of fat-soluble vitamins such as Vitamin A and Vitamin D. Grassfed butter also is the best source of Vitamin K2, and contains many components that are great for our bodies. This kind of butter is one of the most valued and traditional foods in Europe, where people would eat it at every meal if they could get it.
  5. Homemade grassfed bison liver pâté. Liver is one of the most nutritious of foods, if it comes from healthy, grassfed animals. Liver is full of the perfect range of B vitamins, and many other vitamins and nutrients including Vitamin A and Vitamin D in a form that is easily absorbed by the body. Liver also has many amino acids and helpful substances, and high-quality fat and protein. Grassfed bison is one of the healthiest of animals, and its liver is a superfood. The large amount of pastured butter I use in the pâté helps make it delicious as well as even healthier. Liver pâté is yet another traditional food. Even people who hate the taste of liver can enjoy liver pâté.
  6. Raw cheese. This full-fat traditional cheese, made from unpasteurized, raw milk, is one of the most nutrient-dense foods you can eat. It is full of good fats, easily-absorbed quality protein, and many vitamins, nutrients, and enzymes. Since cheese is a fermented food, the nutritional value has been enhanced through the fermentation process. Raw cheese is one of the most traditional foods in Europe, and many other parts of the world.
  7. Organic apple wedges. “An apple a day keeps the doctor away” is ancient wisdom. Since I consider doctors and their poison drugs, radiation, and surgery to be the biggest single threat to my life and health, I do want them to be kept away from me. And I have not needed them for over eight years. In addition to protection from doctors, organic apples have many wonderful nutrients, including vitamins, minerals, and special substances that help reduce inflammation and fight the effect of free radicals on our bodies.
  8. Smoked wild raw salmon. The delicious meat of wild salmon has been traditionally cold smoked to preserve it, which gives it wonderful flavor. The beautiful orange color of the fish is real, unlike farmed salmon, and the raw fish is full of minerals and nutrients abundant in the sea such as iodine and magnesium, and helpful enzymes. Smoked wild fish is one of the most ancient of foods, going back thousands of years.
  9. Homemade fermented vegetable salsa. Chopping various organic vegetables into tiny shreds and lacto-fermenting them is a traditional way to enhance their nutritional value and digestibility. The traditional fermentation process makes the vegetables easier to digest, and increases the vitamin content, while adding beneficial probiotics. This kind of salsa not only provides great nutrition, but aids digestion.

My real food plate is 100 percent free of GMOs, soy, modern refined foods, modern vegetable oils, modern grains, and all the other factory foods that comprise the Standard American Diet, known as SAD. Instead, my real food plate makes me HAPPY.

Rich Pasture Means Delicious, Fragrant, Grassfed Meat

Recently the issue arose on Facebook as to why some grassfed meat might have a strong, almost fishy smell. The opinion was expressed that the steer might have eaten wild onion or wild garlic, which are known to give a bad taste and smell to milk. Should a good grassfed farmer remove wild onion and wild garlic from their pastures?

As I do not raise grassfed meat, (though I certainly cook it and eat it), I posed the question to two of the best grassfed ranchers I know: John Wood of U.S. Wellness Meats, and Chris Kerston of Chaffin Family Orchards.

John qualifies because his meat is always delicious, and smells great while it is cooking and even better when it is done.

John has never had an issue with wild garlic or wild onions, and has not noticed them on his land. John is of the opinion that a good stand of grass usually chokes out wild garlic and wild onion. John’s pastures have some of the richest, greenest, most beautiful grass I have ever seen. John has substantially increased the density and richness of his grass by rotational grazing techniques, and by enriching the soil with ancient vegetable matter. Meat from his farm, raised on that wonderful grass, is in a class of its own, in my opinion. I have eaten a lot of John’s beef over the last six years.

Chris said that what the animal eats has a huge effect on flavor. Eating a lot of wild garlic and wild onion will have a big effect on the taste and smell of the meat However, Chris is opposed to removing wild garlic and wild onion from grazing land. As Chris pointed out, removing any natural plant from a pasture will affect the natural balance, and something else will take its place. Chris stated that cattle will not eat pungent plants like wild garlic and wild onion in normal conditions. They prefer sweet grasses. Cattle will eat pungent plants for medicinal purposes, and Chris has observed his cattle treating themselves by eating certain pungent plants and grasses when they have a need. However, this is only done on a short-term basis. Also, the amount of pungent plants they eat for this purpose is in small quantities, not enough to interfere with the flavor or smell of the meat. The other situation where cattle will eat wild garlic and wild onion is when they do not have enough other suitable feed (like grass) to eat, and will eat anything out of hunger. This could certainly affect the taste and smell of the meat. I have visited Chris’s farm, and seen the beautiful rich, green grass the cattle graze on. Grazing is rotated to enrich the soil and the grass. The soil on Chris’s farm is particularly rich, and has never been sprayed with chemicals. It provides dense, sweet, green grass that the cattle love. The grass gives the cattle a deep, beefy flavor that I love.

It is clear that having plenty of good sweet grass, and providing adequate pasture prevents the problem.

Chaffin Family Orchards does not sell its meat over the Internet, but you can buy it directly from the ranch or at the farmer’s markets where Chaffin sells meat, or some buying clubs. Chaffin does sell its magnificent olive oil over the Internet. This olive oil is my absolute favorite, and my first choice for marinating meat.

While John’s Missouri grassfed beef tastes different from the California grassfed beef raised by Chris, both tastes are wonderful, and I love to eat both of them.

Three Steps to Great Lamb

Lamb is very unpopular in the United States. The amount of lamb in the diet of the average American has declined steadily. When I mention lamb to my friends, most of them say “I don’t like lamb.” This dislike is so intense that most of them will not even taste it.

Yet lamb is extremely popular and valued in all of Europe, the former Soviet Union, the Middle East, India, Australia, South America, New Zealand, in most of the world. In fact, lamb may be the world’s favorite meat.

Why do Americans dislike lamb? Why does the rest of the world love it?

The answer is very simple. The lamb eaten in the rest of the world is very different than most American lamb. There are two major differences.

First, American lamb is usually grain finished, while lamb in the rest of the world is almost always raised exclusively on grass.

Second, American lamb often comes from animals that are also used for wool. Lanolin, a substance present in sheep bred for wool, gives an unpleasant taste and smell to the meat. Most of the lamb eaten in the rest of the world comes from breeds raised for meat, not wool.

Grassfed Lamb Tastes Better

Most American lamb is “finished” on grain, in a feedlot. “Grain” usually means a mixture of GMO corn and GMO soy. This kind of grain is not the natural food of lambs, who are ruminants designed to live on living plants in the pasture, not processed grains.

Most of the lamb eaten in the rest of the world is fed grass only, and is never put in a feedlot.

This is a crucial difference, as the taste of lamb is heavily influenced by what the lamb is fed. For example, lambs raised in central Spain eat a number of herbs in the pasture, which gives a wonderful, herbaceous taste to their meat. Lamb raised in the salt marshes of Brittany is valued for its delicious meat, which has a slightly salty taste, from marsh plants growing in salty soil.

Lamb fed GMO corn and GMO soy has its taste altered by this feed. I consider the taste of such grain fed lamb to be awful.

Grassfed American lamb is wonderful. I have been fortunate enough to get lamb from the Willamette Valley in Oregon. This lamb has a wonderful flavor from some of the richest, greenest grasses in the world.

I have also been fortunate enough to get lamb raised on the Great Plains of the United States, which has grazed on the rich native grasses that were used to nourish the buffalo. The taste of this lamb is also wonderful, though it is different from the Oregon lamb, because the native forage is different.

Grain feeding, in my experience, makes the lamb greasy, with an unpleasant texture. One rancher described this lamb as tasting like “a great, greasy glob of nothing.”

Grassfed lamb has a sweet, clean taste, redolent with the flavor of the living herbs and grasses eaten on the pasture. It is never greasy, and the texture is firm and tender.

The first step to eating great lamb—buy grassfed and grass finished only.

Lamb Bred for Meat Tastes Better

Humankind has developed many breeds of sheep over thousands of years. Some breeds were developed for their wool, which was used to make clothing. The wool and meat of these breeds contain a great deal of lanolin, a substance that smells bad and gives an unpleasant flavor to meat.

Breeds that have been developed for meat do not have lanolin, and their meat smells good and lacks the unpleasant flavor given by lanolin. Many of these meat breeds have a wonderful flavor and texture of their own, when grassfed.

Unfortunately, much of the lamb sold in the United States comes from breeds that are used both for wool and meat. This is the cause of the unpleasant smell and taste so many Americans associate with lamb.

Meat breeds smell good and taste better.

The second step to eating great lamb is to only buy lamb that was bred for meat, not wool. US Wellness Meats is a great internet source of grassfed lamb from breeds that have been developed for meat.

Traditional Cooking Means Great Lamb

Once you have grassfed and grass finished lamb, from a meat breed, you have to know how to cook it. Lamb is not difficult to prepare, but it is easy to ruin. There are many traditional ways of cooking grassfed lamb that are both easy and wonderful, and a number of them are in my cookbook, Tender Grassfed Meat.

The third step to having great lamb is to learn traditional ways of cooking it.

The Three Steps to Great Lamb:

  1. Buy only grassfed and grass finished lamb.
  2. Buy only lamb that is raised for meat.
  3. Learn how to cook this wonderful meat.

The Benefits of Organ Meats

The standard American diet, known as “SAD” (and it is really sad, especially for those who eat it) does not contain any organ meats. In fact, organ meats are demonized for having fat and cholesterol. This is truly a shame, because organ meats from grassfed animals are one of the most nutrient-dense foods available, being packed with vitamins, minerals, amino acids, and other nutrients.

Our ancestors knew the value of organ meats. They gave great value to liver, heart, and kidney, and used these foods to support the health of their own organs. We can do the same.

Organ Meats Were Crucial in Traditional Diets

When I did the research for Tender Grassfed Meat: Traditional Ways to Cook Healthy Meat, I read a number of old cookbooks. I was astonished to find literally hundreds of recipes for all kinds of organ meats. Liver was considered a staple of the diet, and was sautéed, made into dumplings and pastries, eaten raw, puréed, roasted, and minced. When hunters killed an animal, it was a tradition to eat the warm liver on the spot, raw, with everyone in the hunting party having a share. This was not only a tradition among European hunters, but was also done by the Native Americans, and other people all over the world. Even predators such as lions, bears, and tigers will eat the liver first. There are hundreds of traditional European sausages made from liver, liverwurst being just one of them. Pâtés are one of the tastiest results of this tradition.

There were a myriad of recipes containing kidneys, heart, brains, sweetbreads (thymus gland), intestines, even lungs, spleens, and other organs. These organs were also made into sausages, pies, soups, fritters, and preparations unique to each organ. It was also traditional to stuff the stomach of an animal with chopped organ meat and other foods, the famous Scottish Haggis being an example of this. Most of these recipes were a great deal of work, because most organ meats require a great deal of trimming. There are often membranes, veins, arteries, and other inedible parts that must be removed, and the edible portions often required soaking, often multiple soakings, pounding, and intense cleaning. These recipes would often go into great detail as to how to prepare the organ meats for cooking.

The healthy peoples studied by Dr. Weston A. Price all ate organ meats, and valued them highly. Their traditional preparations of these meats also involved a great deal of work in cleaning and preparing the organs.

It should be noted that many of these dishes did not taste particularly good, and were resisted by children. People ate them anyway, and forced their children to eat them.

Why did all of these traditional peoples go to all that work and trouble? Because they knew there was something in these organ meats that was good for them, and because this knowledge had been handed down from generation to generation.

The Traditional Use of Organ Meats to Support Organ Functioning

Many traditional peoples, including the Native Americans, and even the pre-drug medical profession, believed that eating the organs from a healthy animal would support the organs of the eater. A traditional way to treat a person with a weak heart was to have the person eat the heart of a healthy animal. There were a number of country doctors who reported success with using this method. Eating the brains of a healthy animal was also believed to support clear thinking. People with bladder and kidney problems would be fed kidney meat from healthy animals. Native Americans with a vision problem or eye injury would be given the eyes of animals to eat. There are many reports confirming the success of such practices. In modern times, a number of people who need thyroid hormones have eaten the thyroids of animals, as an effective alternative to thyroid medication. However, I do not recommend that anybody do this on their own, without the supervision of a qualified medical professional. Nevertheless, many people have reported success with this practice.

Liver was often given to sick people, as the huge amounts of quality nutrients in this organ helped rebuild their bodies. Great emphasis was placed on only eating the organs from healthy animals.

However, most of the organ meats were eaten as part of the regular diet, by healthy people whose culture knew that eating these organs would support the natural functioning of their bodies. That is why they went through all the work necessary to prepare them.

Science Has Confirmed the Nutritional Benefits of Organ Meats

The development of the ability to identify and test for the presence of nutrients has confirmed what most people already knew—organ meats are a nutritional powerhouse, full of vitamins, minerals, amino acids, and many other substances vital for nutrition. Liver in particular is crammed full of vital nutrients, which is why predatory animals eat it first, and why it has been so valued over the course of time.

Unfortunately, organ meats have been demonized because they contain fat and cholesterol, and most people are afraid to eat them. The organ meats eaten by our ancestors and traditional peoples have great nutritional value.

An Easy Way to Eat Organ Meats

We can get the benefits of organ meats, even today. I do not recommend eating the organs of factory animals. The organ meat of factory animals is not the same meat that has been eaten for thousands of years, but is different, as the animals have usually been given hormones and antibiotics, and have not been fed their natural feed. My personal choice is to eat the organs of grassfed and grass finished animals only. In the case of omnivorous animals such as pigs and chickens, I choose to only eat the organs of pastured animals.

But I will confess that all the preparatory work that is necessary for enjoying most organ meats is more than I want to do. I will buy organ meats that come ready to cook, but my favorite way to eat organs is by eating organ sausages.

Great care must be taken in choosing sausage, because all kinds of undesirable ingredients are often added to them. I insist on knowing everything that is in a sausage before I eat it. Currently, I know of only one Internet source for grassfed organ sausage that has no undesirable ingredients. These sausages are of the highest quality, and I eat them at least once a week. These are the organ sausages made and sold by US Wellness Meats. They make a delicious liverwurst that contains liver, heart, and kidney. They make two kinds of braunschweiger that contain a lot of liver: one cooked, and the other one raw. They also sell a headcheese that contains tongue and heart. Organ meats are some of the most vital and nutrient-dense foods available to us. Our ancestors knew this, and we can learn from them.

Grassfed Farmer Renews the Land

Great grass = healthy, contented cows.

Life begins with the land. The plants we eat cannot provide us with vitamins and minerals unless the soil is rich enough. An animal that has eaten plants grown on depleted soil cannot provide us with the nutrients we need. Modern farming methods can deplete the soil of nutrients. Even traditional methods can deplete the soil unless good crop rotation practices are followed. But one grassfed farmer has reversed this frightening trend. John Wood of US Wellness Meats is renewing the soil on his farm. He has doubled the yield of grass and improved the quality of his forage. This has improved the already excellent quality of the meat he raises. And he has accomplished this with substances derived from long dead plants.

Depletion of the Soil by Farming Harms the Fertility of the Land

The problem of soil depletion is not new. Some of the most barren land on earth was once fertile farmland, until the soil was completely depleted. A number of ancient peoples would leave once the soil was depleted, and move somewhere else, where the cycle would be repeated.

In modern times, there have been many reports stating that much of the soil used for farming is depleted, and that plants grown on depleted soil lack the minerals needed for health. These reports have been published by organizations ranging from the United States Senate to the World Health Organization.

What I Noticed

I have been a customer of US Wellness for many years, long before I wrote a cookbook. In fact, the very first grassfed meat I cooked successfully came from US Wellness. Over the years, I have had many email and telephone conversations with John Wood, the founder of US Wellness. One conversation covered the efforts John was making to improve the soil on his farm. Recently, I noticed that some of the meat I was getting from US Wellness had really improved in quality. The meat had always been excellent before, but it was even better now. The meat was even more tender than before. The meat had a lot of tiny flecks of healthy fat, the very best kind of marbling. The meat always had great flavor, but now it had a wonderful flavor that was better than ever. The meat had always made me feel good after I ate it, but this new meat was even more satisfying and renewing. I knew that something had changed for the better. My guess was that this might have something to do with John’s efforts to improve the soil on his farm. I was right.

Out of Death Comes Life

What John did was to add Humic and Fulvic acid to his land. Humic and Fulvic acid come completely from very old plant matter that has undergone microbial degradation. The interaction of certain microbes with dead plant matter creates a variety of substances that are rich in minerals and other substances. Humic and Fulvic acid not only enrich the soil with minerals, but also provide the nutrients necessary for a number of biological processes that renew the soil, including causing a huge multiplication of the mycortizal fungi. These fungi greatly enhance the ability of plants to use nutrients, including carbon taken from the atmosphere by the plant and deposited in the soil by means of the roots. This is yet another example of how the ecosystem creates life from death—the dead plants eventually turn into a substance that renews the life in the soil.

What are the Results?

John’s land is now producing twice the amount of grass it used to. In addition, John is seeing a return of a very special grass to his farm. This grass is called Eastern Gamma. This is a Native American grass that is particularly delicious and nutritious to livestock. It can grow as high as 9 feet, and produces a tremendous volume of forage. Eastern Gamma is considered by many to be one of the most nutritious grasses a cow can eat, and is considered to make the best hay. Cattle like this grass so much that it was called the “ice cream grass” in the 19th century. Eastern Gamma has been killed out by close grazing on most ranges, again, because cattle like it so much. You can see the return of Eastern Gamma to John’s farm in the above photo. Those cows are in food heaven!

How Long Did It Take?

The short answer is two years.

John first added the Humic and Fulvic acid to four paddocks in 2006. In 2008, the results were so outstanding that John added the Humic and Fulvic acid to the rest of his farm. The results really showed in 2010, when the output of grass doubled and the quality of the forage substantially improved.

Better Soil = Better Meat

It is generally agreed that the minerals in the soil are crucial for the nutritional value of the food.  The fact that the land now grows twice the amount of grass certainly shows that there are more nutrients in the soil. The fact that Eastern Gamma is making a successful comeback also supports the increased quality of the soil. But the fact that ultimately convinced me was the definitely improved quality of meat that had been excellent in the past, but is even better now.

The meat used to be tender. The meat used to taste great. The meat used to make me feel good and renewed when I ate it. The meat now is more tender. The taste is even better. I feel even more energized and renewed when I eat this fine grassfed meat from US Wellness Meats.

Better Soil = More Food

The most important factor needed to feed the world is good soil. Without good soil, there is no good place to raise crops or graze animals. Some farming practices deplete the soil and reduce the amount of food that the world can raise. Farming practices that improve the soil increase the amount of food the world can raise. Farmers who renew the land do us all a great service.

Organ Sausages Make Innards Delicious

How would you like to eat a totally natural food that would give your body most of the nutrients it needs, in a form that your body can easily digest and use? What if I told you that this food contained the entire B complex family of vitamins, in the right proportions? What if I told you that this food was rich in true vitamin A, in a form that is ideal for your body? What if I told you that this food contained natural vitamin D, again in a form that your body can easily use? What if I told you that this food contained many other vital nutrients? What if I told you that your body had evolved over time to process, use, and digest this food? What if I told you that this food is so full of nutrition that it was sacred in many traditional cultures? Would you want to eat this food?

Well, everything I have said about this food is true. Interested? The food is liver from grassfed and grass finished animals.

One of the great ironies of nutrition is that some of the most nutrient dense foods are the most feared and despised. Organ meats have lost their popularity in the west, despite their wonderful nutritive qualities. Saturated animal fat has also been demonized, but that is another subject.

How nutritious is organ meat? A study was done at the University of Chicago, in the 1930s. The study had a single subject, an arctic explorer who had lived with the far northern Inuit, and ate their diet. The explorer agreed to eat only animal and fish foods during the study, which went on for months. No grains, no vegetables, no plant foods. The study found that the explorer thrived, as long as he was able to eat liberally of the fat and the organs of the fish and animals he consumed. All the fish were wild and all the animals were grassfed, as no other versions were available at that time. The organ meats provided the explorer with all the vitamins and minerals he needed. At one point in the studies, the researchers restricted the explorer to lean meat only. He very quickly became sick and lethargic, but recovered completely when the fat and organ meats were restored to his diet.

Why are liver and other organ meats so despised? There are a number of reasons. I personally find organ meat from factory animals to be particularly unappealing. The organs of grassfed and grass finished animals are far more appealing to my senses.

All organ meats contain a good portion of saturated animal fat, a nutritional powerhouse that has been demonized in western culture.

Even the best grassfed organ meats require the removal of membranes, veins, tubes, and other parts before preparation, which is a lot of rather slimy work.

The solution for me is grassfed organ sausage. US Wellness Meats makes several varieties of organ sausages. I do not know of any other grassfed organ sausages. These sausages use only quality natural ingredients. They are made out of meat, organs, and a few seasonings—with no filler material.

I have two favorites. US Wellness Liverwurst is 30% beef and fat, 30% liver, 20% heart, and 20% kidney. It is an easy to eat treasure of grassfed organ meat. The sausage comes fully cooked, so you can eat it right out of the package, though I usually make it the main ingredient in an absolutely delicious meatloaf.

I should note that many traditional peoples and some old time doctors believed that one of the best ways to keep a strong heart was to eat the hearts of healthy animals. It was also believed that the liver would be strengthened by eating liver, and the kidneys would be helped by eating kidneys. While I cannot speak as to whether this is true, I can tell you that I feel better all over after eating this sausage.

My other favorite is US Wellness Raw Braunschweiger. This is 60% beef and fat, and 40% liver. This sausage is raw, and must be cooked before eating.
